  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs
  • ¼ cup low-sodium soy sauce
  • 1 cup tonkatsu sauce
  • 2 tbsp rice vinegar
  • 3 cups cooked jasmine rice

Instructions

  1. Prepare the chicken by pounding the breasts between plastic wrap until about ½ inch thick.
  2. Set up a breading station with one bowl for flour, one for beaten eggs, and one for panko breadcrumbs.
  3. Coat each chicken breast in flour, dip in eggs, and then coat with panko breadcrumbs.
  4. Heat vegetable oil in a skillet over medium-high heat, then fry the breaded chicken for 3-4 minutes on each side until golden brown.
  5. Meanwhile, cook jasmine rice according to package directions.
  6. Slice the cooked katsu and layer it on top of the rice in serving bowls. Drizzle with tonkatsu sauce and garnish as desired.
