Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 8 oz spaghetti or linguine
  • 4 cloves fresh garlic (minced)
  • 2 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • ½ cup dry white wine
  • 2 tbsp lemon juice (freshly squeezed)
  • ¼ cup fresh parsley (chopped)

Instructions

  1. Cook spaghetti or linguine in the Instant Pot with water and a pinch of salt on high pressure for 4 minutes. Quick-release the pressure, drain, and set aside.
  2. In the same pot, add olive oil and butter over medium heat using the sauté function. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Pour in white wine and lemon juice; let simmer for 2 minutes.
  4. Add shrimp, season with salt and pepper to taste. Close the lid and cook on high pressure for 1 minute.
  5. Stir in drained pasta gently until well combined. Add chopped parsley.
  6. Transfer to plates immediately while hot, garnishing with extra parsley.
