  • 2 lbs flank steak
  • 1 medium sweet onion, chopped
  • 4 garlic cloves, minced
  • 1 cup low-sodium beef broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • Juice of 2 limes (about 3 tbsp)
  • 8 soft corn tortillas
  • 1 cup salsa
  • 1 avocado, sliced
  • ½ cup fresh cilantro, chopped

Instructions

  1. Chop onion and mince garlic. Season flank steak with chili powder, cumin, salt, and pepper.
  2. Set Instant Pot to 'sauté' mode. Add oil; sauté onions and garlic until translucent (about 3 minutes).
  3. Add seasoned flank steak and beef broth to the pot. Close the lid and set to 'manual' high pressure for 30 minutes.
  4. Allow a natural release for 10 minutes before quick releasing remaining steam.
  5. Remove steak, shred with forks, and return to juices before filling taco shells.
  6. Assemble tacos with shredded steak and desired toppings.
