Ingredients

Scale
  • 1 lb pork tenderloin

  • 1/2 cup brown sugar
  • Zest of 1 orange
  • 1 cinnamon stick
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Rinse cranberries under cold water, discarding any mushy ones. Zest the orange.
  2. Set Instant Pot to 'Sauté' mode. Season pork with salt and pepper, searing until golden brown (about 3 minutes per side). Remove pork from pot.
  3. Add cranberries, brown sugar, orange zest, chicken broth, and cinnamon stick to the pot. Stir to combine.
  4. Place the seared pork on top of the cranberry mixture, secure the lid, and cook on high pressure for 10 minutes.
  5. Perform a quick release of steam. Let pork rest for 5 minutes before slicing and serving with cranberry sauce.
