  • 1 cup firm tofu, cubed
  • 1 cup shiitake mushrooms, sliced
  • 2 large eggs, beaten
  • 3 tbsp rice vinegar (adjust to taste)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp chili paste (adjust for spice level)
  • 2 green onions, chopped

Instructions

  1. In a large pot, bring the chicken or vegetable broth to a gentle simmer over medium heat.
  2. Add cubed tofu and sliced mushrooms to the simmering broth. Cook for about 5 minutes until mushrooms soften.
  3. In a small bowl, whisk together rice vinegar, soy sauce, chili paste, and crushed black pepper. Pour this mixture into the pot.
  4. Slowly drizzle the beaten eggs into the soup while stirring gently to create ribbons.
