- 1 pound fresh carrots, peeled and cut into sticks
- 1/2 cup whole milk ricotta cheese
- 1/4 cup honey
- 2 tablespoons unsalted butter
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
- In a small saucepan over medium heat, melt the butter. Stir in the honey and simmer for about two minutes.
- In the prepared baking dish, toss the carrot sticks with salt and pepper. Drizzle half of the honey glaze over them and mix well.
- Roast the carrots in the oven for 25-30 minutes until tender and caramelized.
- Once cooked, allow to cool slightly before adding dollops of ricotta on top and drizzling with the remaining glaze.
