Description

Honey Glazed Ricotta Carrots are a delightful side dish that perfectly balances sweet and savory flavors. Fresh carrots are roasted to tender perfection and drizzled with a luscious honey glaze, then topped with creamy ricotta. Ingredients

  • 1 pound fresh carrots, peeled and cut into sticks
  • 1/2 cup whole milk ricotta cheese
  • 1/4 cup honey
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
  2. In a small saucepan over medium heat, melt the butter. Stir in the honey and simmer for about two minutes.
  3. In the prepared baking dish, toss the carrot sticks with salt and pepper. Drizzle half of the honey glaze over them and mix well.
  4. Roast the carrots in the oven for 25-30 minutes until tender and caramelized.
  5. Once cooked, allow to cool slightly before adding dollops of ricotta on top and drizzling with the remaining glaze.
