  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 cup whole milk
  • 2 tsp vanilla extract
  • 2 tsp peppermint extract
  • For the Frosting: 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Then add milk, vanilla extract, and peppermint extract.
  4. Gradually mix in the dry ingredients until just combined.
  5. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Let cool for ten minutes before transferring to wire racks.
  6. For the frosting, beat cream cheese until smooth. Gradually add powdered sugar and then mix in heavy cream until desired consistency is reached.
  7. Once cakes are completely cooled, frost generously between layers and on top.
