- 4–5 lbs Prime Rib Roast
- 2 tbsp Fresh Rosemary, finely chopped
- 2 tbsp Fresh Thyme, finely chopped
- 4 Garlic Cloves, minced
- 3 tbsp Olive Oil
- Salt and Pepper to taste
- 1/4 cup Prepared Horseradish
- 1/2 cup Sour Cream
- Salt to taste
Instructions
- Preheat oven to 450°F (230°C).
- In a bowl, combine rosemary, thyme, garlic, olive oil, salt, and pepper.
- Rub the herb mixture all over the prime rib.
- Place the roast on a rack in a roasting pan; roast for 15 minutes. Reduce temperature to 325°F (165°C) and continue roasting until desired doneness (about 1.5 hours for medium rare).
- For the sauce, mix horseradish and sour cream in a bowl; season with salt.
- Let the roast rest for at least 20 minutes before carving. Serve with horseradish sauce.
