Ingredients

  • 45 lbs Prime Rib Roast
  • 2 tbsp Fresh Rosemary, finely chopped
  • 2 tbsp Fresh Thyme, finely chopped
  • 4 Garlic Cloves, minced
  • 3 tbsp Olive Oil
  • Salt and Pepper to taste
  • 1/4 cup Prepared Horseradish
  • 1/2 cup Sour Cream
  • Salt to taste

Instructions

  1. Preheat oven to 450°F (230°C).
  2. In a bowl, combine rosemary, thyme, garlic, olive oil, salt, and pepper.
  3. Rub the herb mixture all over the prime rib.
  4. Place the roast on a rack in a roasting pan; roast for 15 minutes. Reduce temperature to 325°F (165°C) and continue roasting until desired doneness (about 1.5 hours for medium rare).
  5. For the sauce, mix horseradish and sour cream in a bowl; season with salt.
  6. Let the roast rest for at least 20 minutes before carving. Serve with horseradish sauce.
