  • 14 oz firm tofu, pressed and cubed
  • 2 cups green or Napa cabbage, chopped
  • 1 cup bell peppers, sliced (mix of colors)
  • 1 cup carrots, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil (for cooking)

Instructions

  1. Press the tofu for 15 minutes to remove excess moisture. Meanwhile, chop the cabbage, carrots, and bell peppers into bite-sized pieces.
  2. In a bowl, whisk together soy sauce, sesame oil, and minced garlic.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown (5-7 minutes).
  4. Add the cabbage, bell peppers, and carrots; stir-fry for about 5 minutes until tender yet crunchy.
  5. Pour the sauce over the vegetables and tofu; stir well for another couple of minutes until heated through.
  6. Serve hot, garnished with sesame seeds or green onions if desired.
