  • 4 medium russet potatoes (about 2 lbs), peeled and chopped
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup grated sharp cheddar cheese
  • Salt and pepper to taste
  • 1 tsp paprika (or cayenne for heat)
  • 2 tbsp butter
  • ¼ cup milk

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish.
  2. Boil the chopped potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper.
  3. In a skillet, sauté onions in oil until translucent. Add garlic and ground beef; cook until browned. Drain excess fat.
  4. Season with salt, pepper, paprika, and beef broth; simmer for 5 minutes.
