- 2 tbsp olive oil

Instructions
- Slice the eggplants lengthwise into 1/4-inch thick strips. Lightly salt the slices and let sit for 30 minutes to draw out moisture.
- Rinse the eggplant slices under cool water and pat dry with paper towels.
- Preheat the grill to medium heat. Brush each slice with olive oil and grill for about 3 minutes per side until tender.
- In a bowl, mix ricotta, chopped basil, half of the grated Parmesan, salt, and pepper until well combined.
- Fill each grilled eggplant slice with about a tablespoon of the ricotta mixture at one end and roll up securely; use toothpicks if necessary.
- Grill the rolled-up eggplants seam-side down for an additional 2 minutes to warm through.
