Description

Ingredients

  • 2 medium eggplants (about 1 lb total)
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Slice the eggplants lengthwise into 1/4-inch thick strips. Lightly salt the slices and let sit for 30 minutes to draw out moisture.
  2. Rinse the eggplant slices under cool water and pat dry with paper towels.
  3. Preheat the grill to medium heat. Brush each slice with olive oil and grill for about 3 minutes per side until tender.
  4. In a bowl, mix ricotta, chopped basil, half of the grated Parmesan, salt, and pepper until well combined.
  5. Fill each grilled eggplant slice with about a tablespoon of the ricotta mixture at one end and roll up securely; use toothpicks if necessary.
  6. Grill the rolled-up eggplants seam-side down for an additional 2 minutes to warm through.
