  • 45 pounds pork shoulder
  • 68 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 medium onions, thinly sliced
  • 3 medium carrots, cut into chunks
  • 2 cups pork stock or broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Pat the pork shoulder dry and season generously with salt and pepper.
  3. Mix minced garlic and chopped rosemary; rub this mixture over the pork shoulder.
  4. Spread sliced onions and carrots in a roasting pan; place the seasoned pork on top.
  5. Pour pork stock around the edges of the pan.
  6. Cover with aluminum foil and roast for about 3 hours. Remove foil during the last hour to achieve a golden-brown crust.
