  • 34 lbs boneless pork loin
  • 2 cups high-quality sauerkraut
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tsp caraway seeds
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Generously season the pork loin with salt and pepper.
  3. In a large skillet over medium heat, sear the pork loin on all sides until golden brown (about 3 minutes per side).
  4. In a roasting pan, combine sauerkraut, onions, garlic, caraway seeds, and chicken broth.
  5. Place the seared pork loin on top of the sauerkraut mixture. Cover with foil and roast for about 2 hours until the internal temperature reaches 145°F (63°C).
  6. Remove foil during the last 30 minutes of cooking for a crispy crust. Let rest for 10 minutes before slicing.
