  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Boil salted water in a large pot and cook rigatoni until al dente according to package instructions.
  2. In an oven-safe skillet over medium heat, add olive oil and butter. Season chicken with salt and pepper, sear until golden brown (about 5 minutes per side), then remove and keep warm.
  3. Sauté minced garlic in the skillet until fragrant (about 1 minute).
  4. Pour in heavy cream, stirring constantly. Gradually add Parmesan cheese until melted and smooth; season with salt and pepper to taste.
