  • 2 cups vegetable broth
  • 4 tbsp unsalted butter
  • 3 cloves fresh garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water in a fine-mesh strainer for about two minutes to remove bitterness.
  2. In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until liquid is absorbed.
  3. While quinoa cooks, melt butter in a skillet over medium heat. Add minced garlic and sauté until fragrant, about one minute.
  4. Once quinoa is cooked, let it sit covered for five minutes. Fluff with a fork and mix in the sautéed garlic butter.
  5. Season with salt and pepper to taste. If desired, stir in chopped parsley before serving.
