- 4 medium russet potatoes (about 2 lbs), peeled and sliced
- 2 large yellow onions, thinly sliced
- 1 cup Gruyère cheese, shredded (or mix with cheddar)
- 2 tablespoons unsalted butter
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Soak the sliced potatoes in cold water while you caramelize the onions.
- In a skillet over medium heat, melt butter and add the onions. Cook for about 20 minutes until golden brown.
- In a bowl, combine cooked onions (reserve some for topping), sliced potatoes, heavy cream, salt, pepper, and half of the cheese. Stir until well coated.
- Layer half of the potato mixture in the baking dish, sprinkle with some cheese, add the remaining mixture, then top with remaining cheese and reserved onions.
- Cover with foil and bake for 45 minutes. Remove foil during the last 10 minutes to allow browning.
