  • 2 lbs beef chuck roast
  • 4 medium onions, sliced
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 cup shredded Gruyère cheese
  • 1 tsp garlic powder
  • 1 tsp thyme (fresh or dried)
  • 2 tbsp butter

Instructions

  1. In a large pot over medium heat, melt butter and sauté sliced onions for 20-25 minutes until caramelized, stirring frequently.
  2. Increase heat to medium-high, add beef chuck roast, and sear each side for about 3-4 minutes until browned.
  3. Deglaze the pot with beef broth while scraping up brown bits. Add Worcestershire sauce and return caramelized onions to the pot.
  4. Cover and simmer on low heat for at least two hours until beef is fork-tender.
  5. Cook egg noodles according to package instructions until al dente.
  6. Shred the beef in the pot, stir in cooked noodles until well coated, top with cheese, and let melt before serving.
