Ingredients

  • 2 cups sweet potatoes (cubed)
  • 1 cup Honeycrisp apples (diced)
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese (crumbled)
  • 2 cups spinach or arugula
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • 1 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube the sweet potatoes.
  2. Toss sweet potatoes with olive oil, cinnamon, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender and golden.
  3. While the sweet potatoes roast, chop the apples.
  4. In a large bowl, combine roasted sweet potatoes, apples, cranberries, feta cheese, and greens. Drizzle with honey or maple syrup and toss gently.
