  • 1 cup jarred roasted red peppers
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil (plus more for drizzling)
  • 1/2 tsp salt

Instructions

  1. If using fresh peppers, preheat the oven to 425°F (220°C). Cut the peppers in half, remove seeds, and roast on a baking sheet until charred.
  2. In a food processor, combine chickpeas, roasted red peppers, tahini, garlic cloves, lemon juice, and salt. Blend until smooth.
  3. While blending on low speed, drizzle in the olive oil for added creaminess.
  4. Taste and adjust seasoning if needed; blend until well combined.
  5. Transfer to a serving bowl and drizzle with additional olive oil. Garnish with paprika or fresh herbs.
  6. Serve with pita chips or fresh veggies.
