  • 1 lb ground beef (lean)
  • 1 cup bell peppers (chopped; a mix of red, yellow, and green)
  • 1 medium onion (chopped)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted optional)
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a large oven-safe skillet or baking dish with nonstick cooking spray.
  2. In the skillet over medium heat, brown the ground beef for about 5-7 minutes. Drain excess fat.
  3. Add chopped bell peppers and onions to the skillet. Sauté for another 5 minutes until softened.
  4. Stir in diced tomatoes, garlic powder, and oregano; simmer for 2 minutes.
  5. Spread half of the beef mixture in the baking dish, top with one cup of cheddar cheese, layer with remaining beef mixture, then add the last cup of cheese on top.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil for the last 5 minutes to brown the cheese.
