  • 4 cups duck fat
  • 2 tbsp kosher salt
  • 1 tsp fresh thyme leaves
  • 3 tart apples (like Granny Smith), peeled and chopped
  • 1/2 cup brown sugar
  • Juice of 1 lemon

Instructions

  1. Rub salt evenly over duck legs and refrigerate overnight.
  2. Rinse off the salt under cold water, pat dry, and let sit uncovered in the fridge for an hour.
  3. Preheat oven to 225°F (107°C). Submerge duck legs in a Dutch oven with duck fat; cook for about 4 hours until tender.
  4. While the duck cooks, prepare apple sauce by combining apples, brown sugar, lemon juice, and a splash of water in a saucepan over medium heat. Cook for about 10 minutes until soft; mash into a chunky sauce.
  5. Remove duck from fat and crisp skin in a hot skillet for about 3 minutes on each side until golden brown.
  6. Serve crispy duck legs with dollops of apple sauce and drizzle with reserved duck fat.
