  • 1 pre-made pie crust
  • 2 cups fresh spinach (chopped)
  • 1 cup whole milk ricotta cheese
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and fit the pie crust into a pie dish.
  2. In a skillet over medium heat, add olive oil and sauté chopped spinach until wilted, about 3 minutes. Remove from heat.
  3. In a large bowl, whisk together eggs, ricotta cheese, Parmesan cheese, salt, pepper, and oregano until smooth.
  4. Allow sautéed spinach to cool slightly before folding it into the egg mixture.
  5. Pour the filling into the prepared pie crust and spread evenly.
  6. Bake for 30-35 minutes or until set and golden brown on top. Let cool for 10 minutes before slicing.
