  • 2 medium fresh zucchinis (about 300g)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper and lightly spray with non-stick cooking spray.
  3. Cut zucchinis into fry-shaped sticks (about 1/2 inch thick).
  4. In a shallow bowl, mix panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
  5. Dip zucchini sticks in olive oil, then coat in the breadcrumb mixture.
  6. Place on the prepared baking sheet and bake for 20-25 minutes or until golden brown, flipping halfway through.
