Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1.5 cups panko breadcrumbs
- 2 cups romaine lettuce, chopped
- ½ cup Caesar dressing
- 4 brioche sandwich rolls
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C). Prepare three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with a pinch of salt and pepper.
- Coat each chicken breast in flour, then dip into the egg mixture, followed by rolling it in panko breadcrumbs until fully covered.
- Place the coated chicken on a parchment-lined baking sheet. Lightly spray or drizzle olive oil on top. Bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F/75°C).
