  • 1 lb skinless salmon fillets
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 3 tbsp Sriracha sauce
  • ¼ cup mayonnaise
  • 1 tbsp honey

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut salmon fillets into bite-sized pieces and pat dry.
  3. In one bowl, whisk together flour, cornstarch, baking powder, and salt. In another bowl, beat eggs until frothy.
  4. Coat each salmon piece in the flour mixture, dip in egg wash, then coat with panko breadcrumbs.
  5. Bake on the prepared baking sheet for 12-15 minutes or until golden brown.
  6. Mix Sriracha, mayonnaise, and honey in a bowl for the sauce.
  7. Toss baked salmon bites in the sauce before serving.
