  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup shredded pepper jack cheese
  • 2 cloves fresh garlic, minced
  • 2 tbsp unsalted butter
  • 1 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In the same pot, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in heavy cream and bring to a gentle simmer while stirring continuously. Gradually add shredded pepper jack cheese, stirring until melted and smooth.
  4. Stir in red pepper flakes and season with salt and pepper to taste.
  5. Toss the cooked pasta into the sauce, mixing well to coat evenly. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
  6. Serve immediately, garnished with chopped parsley.
