  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 2 tbsp blackening spice
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts generously with blackening spice. In a skillet over medium-high heat, add oil and cook the chicken for 6-7 minutes on each side until blackened and fully cooked (internal temperature of 165°F). Remove from heat and let rest.
  2. Boil salted water in a large pot, then cook fettuccine according to package instructions until al dente. Drain, reserving half a cup of pasta water.
  3. In another pan, heat heavy cream over medium heat. Stir in Parmesan cheese until melted and smooth. If too thick, add reserved pasta water to achieve desired consistency.
  4. Slice rested chicken into strips and toss with drained pasta in the creamy sauce until well-coated.
  5. Serve garnished with fresh parsley and additional Parmesan if desired.
