Ingredients
Scale
- 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
- 2 tbsp blackening spice
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Season chicken breasts generously with blackening spice. In a skillet over medium-high heat, add oil and cook the chicken for 6-7 minutes on each side until blackened and fully cooked (internal temperature of 165°F). Remove from heat and let rest.
- Boil salted water in a large pot, then cook fettuccine according to package instructions until al dente. Drain, reserving half a cup of pasta water.
- In another pan, heat heavy cream over medium heat. Stir in Parmesan cheese until melted and smooth. If too thick, add reserved pasta water to achieve desired consistency.
- Slice rested chicken into strips and toss with drained pasta in the creamy sauce until well-coated.
- Serve garnished with fresh parsley and additional Parmesan if desired.
