  • 1 tbsp baking powder

  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs and then mix in melted butter and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. Carefully fold in the cranberries.
  6. Pour batter into the prepared loaf pan and bake for 55–60 minutes, or until a toothpick inserted comes out clean.
