  • 4 cups low-sodium chicken broth
  • 1 tbsp fresh ginger, minced
  • 2 stalks lemongrass, smashed
  • 4 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 1 cup mushrooms, sliced
  • ½ cup fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • Salt to taste
  • Chili flakes for heat (optional)

Instructions

  1. Prepare your ingredients by chopping the ginger, garlic, bell peppers, and mushrooms.
