- 1 cup basmati rice
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup water
- 1 lb beef sirloin, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
Instructions
- Rinse basmati rice under cold water until it runs clear.
- In a saucepan, combine rinsed rice, coconut milk, and water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
- While the rice cooks, heat a skillet over high heat and add oil. Sear sliced beef for about three minutes until browned; remove from pan.
- In the same skillet, add more oil if needed, followed by garlic and ginger. Stir-fry for five minutes before adding sliced bell peppers.
- Return beef to the skillet and mix in soy sauce and sesame oil until everything is evenly coated.
- Fluff coconut rice with a fork and serve alongside beef stir fry.
