  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the diced onion and bell peppers until softened, about 5 minutes.
  2. Stir in minced garlic along with cumin and chili powder; cook for another minute until fragrant.
  3. Add fire-roasted diced tomatoes and drained beans; mix well.
  4. Pour in vegetable broth to achieve desired consistency; use less broth for thicker chili.
  5. Bring to a gentle boil then reduce heat to low. Simmer uncovered for about 20 minutes to meld flavors.
  6. Taste and adjust seasoning as needed before serving hot.
