  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp nutmeg (optional)
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup unsalted butter (softened) for streusel topping
  • 1/3 cup brown sugar for streusel topping
  • 1/2 cup flour for streusel topping
  • 1 tsp cinnamon for streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and eggs until smooth. Stir in melted butter.
  3. In another bowl, combine flour, baking powder, baking soda, ground cinnamon, and nuts if using.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. For the streusel topping, mix softened butter, brown sugar, flour, and cinnamon until crumbly.
  6. Pour half of the batter into the prepared pan. Sprinkle half of the streusel on top before adding the remaining batter and finishing with more streusel.
  7. Bake for about 60–70 minutes or until a toothpick inserted comes out clean.
