- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- Grate the zucchinis and squeeze out excess moisture using a kitchen towel.
- In one bowl, mix flour, sugar, baking soda, salt, and cinnamon. In another bowl, whisk together oil and eggs, then fold in the grated zucchini.
- Combine the wet and dry ingredients gently until just mixed; avoid overmixing.
- Create the cinnamon swirl by mixing extra sugar with cinnamon. Pour half the batter into the pan, sprinkle with half of the cinnamon mixture, layer with remaining batter, and top with the rest of the cinnamon mixture.
