Ingredients

Scale
  • 4 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1 cup warm water (110°F/43°C)
  • 1/2 cup granulated sugar
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup chopped walnuts or almonds
  • 1/2 cup dried fruit (raisins or currants)

Instructions

  1. 1. Activate the yeast by mixing warm water with sugar and yeast in a small bowl. Let sit until frothy (about 5 minutes).
  2. 2. In a large bowl, whisk together flour, salt, cinnamon, and nutmeg.
  3. 3. Make a well in the dry ingredients and add the activated yeast mixture. Stir until combined.
  4. 4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. 5. Place the dough in an oiled bowl, cover it, and let it rise in a warm spot until doubled (about 1 hour).
  6. 6. Punch down the dough gently, fold in nuts and dried fruit, then shape into round loaves.
  7. 7. Place on parchment-lined baking sheets, cover again, and let rise for another 30 minutes.
  8. 8. Bake at 350°F (175°C) until golden brown (about 25–30 minutes). Cool before serving.
