  • 2 tbsp unsweetened cocoa powder
  • 1/2 cup cold unsalted butter
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 cup low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Water (as needed for dough)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour, cocoa powder, and salt. Cut in butter until crumbly; gradually add cold water to form dough. Chill for 30 minutes.
  3. Sauté mixed vegetables in a skillet over medium heat until tender, about 5 minutes. Add vegetable broth, thyme, and oregano; simmer for 10 minutes.
  4. Stir in cocoa powder into the vegetable mixture until well combined.
  5. Roll out half of the dough on a floured surface; place in pie pan. Add filling and cover with remaining dough.
  6. Cut slits in the top crust and bake for 30-35 minutes until golden brown.
