  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 red apples, diced (about 2 cups)
  • 1 cup toasted walnuts, chopped
  • 2 celery stalks, finely chopped
  • 1 cup plain Greek yogurt
  • 1 tsp Dijon mustard
  • 4 large flour tortillas (or whole wheat)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper, place on a parchment-lined baking sheet, and bake for 25-30 minutes until fully cooked. Let cool before shredding.
  2. In a bowl, combine Greek yogurt and Dijon mustard until smooth.
  3. Shred cooled chicken into bite-sized pieces. Chop apples and celery; roughly chop walnuts.
  4. In a mixing bowl, combine shredded chicken, apples, celery, walnuts, and dressing until well-coated.
  5. Lay out tortillas and spoon salad mixture onto each one. Roll tightly or fold as desired.
  6. Cut wraps in half diagonally for presentation and serve with extra dressing or veggie sticks.
