- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups elbow macaroni (uncooked)
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups shredded sharp cheddar cheese
- 1 cup whole milk
- 1 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
- In a large skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until cooked through. Drain excess grease.
- In a large bowl, mix the cooked pasta, diced tomatoes (with juices), milk, sour cream, and half of the shredded cheese until well combined.
- Stir in the beef mixture until evenly incorporated.
- Transfer to the prepared baking dish and top with remaining cheese. Cover with aluminum foil.
- Bake for 25 minutes covered, then uncover and bake for an additional 10-15 minutes until bubbly and golden brown.
