  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups elbow macaroni (uncooked)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until cooked through. Drain excess grease.
  3. In a large bowl, mix the cooked pasta, diced tomatoes (with juices), milk, sour cream, and half of the shredded cheese until well combined.
  4. Stir in the beef mixture until evenly incorporated.
  5. Transfer to the prepared baking dish and top with remaining cheese. Cover with aluminum foil.
  6. Bake for 25 minutes covered, then uncover and bake for an additional 10-15 minutes until bubbly and golden brown.
