  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1/4 cup buffalo sauce (plus extra for tossing)
  • 2 cloves garlic, minced
  • 2 tablespoons butter (for the sauce)
  • Optional: 1/4 cup blue cheese crumbles

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, minced garlic, eggs, and half of the buffalo sauce. Mix until just combined.
  3. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.

  5. While baking, melt butter in a saucepan over low heat and stir in remaining buffalo sauce.
  6. Toss cooked meatballs in the sauce until well-coated before serving.
