- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1/2 cup Buffalo sauce
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 sheets puff pastry
- 2 green onions, chopped (for garnish)
- Ranch dressing (for serving)
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Cook the chicken breasts in a saucepan over medium heat until no longer pink (about 15 minutes). Let cool slightly, then shred.
- In a large bowl, combine shredded chicken, Buffalo sauce, cream cheese, and half of the cheddar cheese. Mix until well blended.
- Roll out the puff pastry sheets on a floured surface and cut into 4-inch squares.
- Spoon about 2 tablespoons of the chicken mixture onto each square. Fold corners over and seal tightly.
- Place bombs on the baking dish, brush with egg wash if desired, and bake for 20-25 minutes until golden brown. Serve with ranch dressing.
