Description

Berry-Coconut Rocket Pops are a refreshing frozen treat that combines the tropical creaminess of coconut with the vibrant flavors of fresh berries. Perfect for hot summer days, these easy-to-make pops offer a guilt-free indulgence that kids and adults alike will love. Brightly colored and bursting with flavor, they’re ideal for gatherings or simply to enjoy on a sunny afternoon.

  • 1 cup full-fat coconut milk
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Rinse fresh berries under cool water and let them drain.
  2. In a blender, combine coconut milk, honey or maple syrup, and vanilla extract. Blend until smooth.
  3. Pour one-third of the coconut mixture into popsicle molds, tapping to remove air bubbles.
  4. Drop in your mixed berries evenly.
  5. Pour more coconut mixture over the berries, leaving some space at the top.
  6. Insert sticks into molds and freeze for at least four hours or until solid.
