  • 3 cups cooked rice (preferably day-old)
  • 1 cup bell peppers, diced
  • 1 cup peas
  • 1 cup carrots, diced
  • 3 cloves garlic, minced
  • 2 tbsp sriracha sauce (adjust to taste)
  • 2 tbsp mayonnaise
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil

Instructions

  1. Chop the chicken into bite-sized pieces and dice the vegetables.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes.
  3. Stir in minced garlic and diced vegetables; sauté for another 3-4 minutes until tender but crisp.
  4. Add cooked rice to the skillet, breaking up clumps and mixing well for about 2 minutes.
  5. In a small bowl, mix sriracha, mayonnaise, and soy sauce until smooth. Pour over the rice mixture and stir well to coat evenly.
  6. Serve hot, garnished with sliced green onions or sesame seeds if desired.
