  • 2 cups powdered sugar
  • Zest of 1 lemon
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round baking pans and line them with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, mash the ripe bananas until creamy but slightly chunky.
  4. Cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the mashed bananas and lemon zest.
  5. Gradually add the dry ingredients to the wet mixture until just combined—do not overmix!
  6. Divide the batter evenly between prepared pans and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.

  8. For the frosting, blend cream cheese with butter until smooth; gradually add powdered sugar, lemon juice, and zest until fluffy.
