Instructions

  1. Preheat your oven to 350°F (175°C) and prepare muffin tins with liners or grease.
  2. In a bowl, mix flour, baking powder, cinnamon, and brown sugar.
  3. In another bowl, combine pumpkin puree, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gently stir wet ingredients into dry ingredients until just combined; fold in diced apples.
  5. In a small bowl, mix oats, melted butter, brown sugar, and cinnamon for the topping.
  6. Fill muffin tins two-thirds full with batter; sprinkle streusel on top.
  7. Bake for 20-25 minutes until muffins spring back when touched.
