  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 strips thick-cut bacon, diced
  • 3 medium carrots, sliced into coins
  • 2 medium yellow onions, chopped
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup dry red wine
  • 2 cups low-sodium beef broth
  • 4 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping beef into cubes and slicing carrots and onions.
  2. Sauté bacon in the Instant Pot until crispy; remove and set aside while leaving grease.
  3. Sear beef in batches until browned; remove from pot.
  4. Cook onions and carrots for about 3 minutes; add garlic for another minute.
  5. Deglaze with red wine, scraping up brown bits; simmer for a few minutes.
  6. Combine beef, bacon, mushrooms, broth, thyme, salt, and pepper in the pot.
  7. Seal the lid and cook on high pressure for 35 minutes; let pressure release naturally before serving.
