Instructions
- Preheat your oven to 400°F (200°C). Halve the butternut squash, scoop out seeds, drizzle with olive oil, season with salt, and roast cut-side down on a baking sheet for 25-30 minutes until tender.
- Cook pasta according to package instructions until al dente; drain and set aside.
- In a saucepan over medium heat, melt butter. Whisk in flour until smooth. Gradually add milk while whisking continuously until thickened. Stir in garlic powder and shredded cheddar until melted and creamy.
- Mash the roasted squash and mix into the cheese sauce along with cooked pasta until well combined.
