  • 1 medium butternut squash (about 2 cups pureed)
  • 8 oz elbow macaroni or shells
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Halve the butternut squash, scoop out seeds, drizzle with olive oil, season with salt, and roast cut-side down on a baking sheet for 25-30 minutes until tender.
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a saucepan over medium heat, melt butter. Whisk in flour until smooth. Gradually add milk while whisking continuously until thickened. Stir in garlic powder and shredded cheddar until melted and creamy.
  4. Mash the roasted squash and mix into the cheese sauce along with cooked pasta until well combined.
  5. Optionally transfer to a greased baking dish, top with extra cheese, and bake at 350°F (175°C) for 15-20 minutes until bubbly and golden brown.
