  • 1 pound ribeye or sirloin steak, sliced into strips
  • 8 ounces fettuccine pasta
  • ½ cup crumbled Gorgonzola cheese
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water until al dente; reserve ½ cup of pasta water before draining.
  2. In a skillet, melt 1 tablespoon of butter over medium-high heat. Season steak with salt and pepper, sear until golden brown (about 3 minutes per side), then remove from skillet.
  3. In the same skillet, add another tablespoon of butter and minced garlic; sauté until fragrant (about 1 minute). Add heavy cream and bring to a gentle simmer.
  4. Stir in crumbled Gorgonzola and Parmesan cheese until melted and smooth; adjust consistency with reserved pasta water as needed.
  5. Toss cooked fettuccine in the sauce along with the steak strips until well-coated. Serve warm.
