  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • ¾ cup fresh key lime juice (about 1215 key limes)
  • 1 can (14 oz) sweetened condensed milk
  • 4 large egg yolks
  • 1 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press into the bottom and sides of a pie pan.
  2. Bake the crust for 8-10 minutes until golden brown, then let cool.
  3. Whisk together egg yolks and sweetened condensed milk until smooth in another bowl. Gradually add key lime juice and mix well.
  4. Pour the filling into the cooled crust and bake for an additional 15 minutes until set but still slightly jiggly in the center.
  5. Allow to cool for one hour at room temperature, then refrigerate for at least three hours.
  6. Whip heavy cream until soft peaks form and spread over the chilled pie. Garnish with lime slices or zest if desired.
