  • 1 lb large raw shrimp, deveined and peeled
  • 5 oz baby spinach
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, add olive oil and sauté shrimp seasoned with salt and pepper until they turn pink (3-4 minutes). Remove and set aside.
  2. In the same skillet, add mushrooms and cook until golden brown (about 5 minutes), stirring occasionally.
  3. Add minced garlic to the pan and cook for about 1 minute until fragrant. Then stir in fresh spinach until wilted (about 2 minutes).
  4. Pour in heavy cream and let simmer on low heat for about 5 minutes until slightly thickened. Stir in grated Parmesan cheese.
  5. Return shrimp to the skillet and simmer together for an additional 2 minutes to meld flavors.
  6. Serve immediately over pasta or rice, drizzling with any remaining sauce.
