  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 (14 oz) can crushed tomatoes
  • 2 cups low-sodium chicken or vegetable stock
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, minced garlic, basil, parsley, salt, and pepper. Mix until just combined.
  2. Roll the mixture into meatballs about the size of ping-pong balls.
  3. In a large pot over medium heat, add olive oil and brown the meatballs on all sides. Remove them from the pot once browned.
  4. Add minced garlic to the same pot with crushed tomatoes and stock. Bring to a simmer.
  5. Stir in heavy cream and let it simmer gently.
  6. Return meatballs to the pot and simmer for an additional 15-20 minutes until fully cooked.
  7. Serve hot with crusty bread on the side.
