Instructions
- Preheat the oven to 400°F (200°C). Wrap sweet potatoes in foil and roast for 45-60 minutes until fork-tender. Allow to cool before peeling.
- In a bowl, mash the roasted sweet potatoes until smooth. Mix in ricotta, Parmesan, nutmeg, salt, and pepper until creamy.
- Roll out pasta sheets thinly and cut them into 3-inch squares.
